Boise and Meridian are adding enough new restaurants, shops, coffee spots and entertainment concepts that keeping track of all of them has become its own project.

Some are already open.

Others are under construction.

And several major Meridian developments are bringing entire groups of new businesses at once.

Here are some of the Boise and Meridian openings worth watching as of September 2026.

Boise: Darling Don’t Feed the Wolf Coming Downtown

A new Asian-inspired restaurant and bar called Darling Don’t Feed the Wolf is planned for the basement level of the former Louie’s building at 620 W. Idaho Street in Downtown Boise.

The owners describe the concept as a higher-end, New York-influenced Chinese dining experience with a deliberately creative menu.

The building already houses Thick as Thieves and Bar Please upstairs, so this adds another destination to a block that has been undergoing a major revival.

Why we’re watching it

This is another sign that Downtown Boise continues to attract more destination-style restaurants rather than only casual lunch and bar concepts.

Boise: Tante Emma Expanding From Garden Valley

Popular German restaurant Tante Emma is expanding into Downtown Boise.

The restaurant is planned for the Hawkins Headquarters building near Broad and 9th Streets, in the former Bonefish Grill space.

The menu is expected to include familiar German dishes such as schnitzel, pretzels, spätzle, brats and meatballs, with possible brunch and rotating specialties later on.

This one should pair nicely with our Downtown Boise food coverage once it opens.

Boise: Loteria Restaurant Coming to Broadway

Loteria Restaurant is planned for 2137 S. Broadway Avenue, taking over the former Dong Khanh space.

This will be the second brick-and-mortar location for the team behind Tacos Loteria, which already operates in Meridian.

The business originally started as a food truck before opening its Meridian restaurant in 2025.

Why it matters

This is also a good example of businesses expanding between Meridian and Boise, rather than simply choosing one city or the other.

Boise: The Dusty Miller Coming to the North End

The Dusty Miller, a bakery and brunch concept, is expected to open at the 36th Street Event Center in Boise’s North End.

The owners have been looking for a permanent location and are now planning to operate from the event center at 3823 N. Garden Center Way.

For more on the area, see The Ultimate Guide to Boise’s North End.

Boise: Schnitzel Fritz Is Now Open Downtown

Some 2026 openings have already happened.

Schnitzel Fritz, a European deli from the founder of Schnitzel Garten, opened on Main Street in Downtown Boise.

The lunch-focused concept serves items such as baguette sandwiches, schnitzel sandwiches, pastries and salads.

That gives downtown another independent lunch option and adds to the German-food presence that will expand further when Tante Emma arrives.

Boise: Walkin Takos Opens Its First Restaurant

Local food truck Walkin Takos opened its first brick-and-mortar restaurant at 701 N. Orchard Street, in the former Tangos Empanadas location.

The concept centers on chips topped with taco ingredients, along with beer, cocktails and wine.

This also gives us another food stop to connect with The Ultimate Guide to the Boise Bench.

Boise: The Protein Spot Expanding to Southeast Boise

The Protein Spot is planning a third location at 6578 S. Federal Way in Southeast Boise.

The concept is known for higher-protein food and drink options and had targeted a mid-September opening.

For more on the area, see The Ultimate Guide to Southeast Boise.

Meridian: The Village Expansion Is the Big Story

The biggest concentration of new businesses in Meridian is easily The Village at Meridian expansion.

The project adds roughly 100,000 square feet of new retail and restaurant space.

The first batch of businesses is scheduled to open October 9, 2026, with more following afterward.

New Village Stores Opening First

The opening-weekend lineup currently includes:

  • Alo

  • Tecovas

  • Kendra Scott

  • Gorjana

  • Paris Baguette

  • Tempur-Pedic

Additional businesses such as Flower Child, Solidcore, Vuori and 7th Avenue are expected to follow.

Apple Store Planned for The Village

One of the biggest retail additions is a planned Apple Store.

Permits indicate a roughly 10,400-square-foot location as part of The Village expansion.

That would be a significant retail draw for the entire Treasure Valley.

Pottery Barn and Williams Sonoma

The Village expansion is also adding major home retailers.

Pottery Barn has filed plans for an approximately 11,700-square-foot store, and Williams Sonoma has also joined the tenant mix.

Capital Grille Coming to Meridian

The Capital Grille is planning its first Idaho location at The Village.

The high-end steakhouse is expected to occupy nearly 9,000 square feet in a new building along Eagle Road.

That gives Meridian another upscale dining option and continues The Village’s shift toward more destination restaurants.

Culinary Dropout

Culinary Dropout is also planned for The Village.

The concept combines food, cocktails and a social atmosphere and will join the growing group of full-service restaurants along Eagle Road.

Flower Child

Flower Child is another highly anticipated addition.

The health-conscious fast-casual concept is planned for a roughly 3,100-square-foot space in the expansion.

Recent construction updates show the location moving forward as part of The Village’s new restaurant lineup.

Paris Baguette

Paris Baguette is one of the first businesses scheduled to open during the October 9 expansion launch.

The bakery-cafe concept serves pastries, cakes, sandwiches and coffee.

This one could quickly become relevant to our future Meridian breakfast and coffee content.

Postino WineCafe

Arizona-based Postino is planning a roughly 5,200-square-foot Village restaurant.

The concept focuses on wine, bruschetta, charcuterie, paninis, salads and brunch.

That gives The Village another restaurant aimed as much at hanging out as simply eating.

Over Easy Coming to Meridian

Brunch chain Over Easy is planning a location in the former Blaze Pizza space at The Village.

The company is also planning another Meridian location at The District at Ten Mile.

The Village location is currently targeted for the first quarter of 2027, so this is one we will keep tracking rather than list as a 2026 opening.

Meridian: The District at Ten Mile Is Another Huge Growth Area

The Village is not the only major Meridian commercial project.

The District at Ten Mile, near Ten Mile Road and I-84, is assembling a large lineup of retail, dining, fitness and hotel tenants.

Confirmed or planned names include:

  • Target

  • Kura Sushi

  • Handel’s Ice Cream

  • Life Time Fitness

  • Ashley Furniture

  • Hilton

  • Residence Inn

  • Chase Bank

  • potential In-N-Out Burger

The exact opening timeline varies by tenant, but this is going to become a major west-Meridian destination.

Kura Sushi

Kura Sushi is one of the more interesting restaurant additions at Ten Mile.

The chain is known for conveyor-belt sushi and technology-heavy ordering.

That should make it one of the more distinctive restaurant openings in Meridian once complete.

Handel’s Ice Cream

Handel’s Homemade Ice Cream is also planned for The District.

The chain rotates dozens of flavors and makes ice cream in-house.

Life Time Fitness

This one is much larger than a normal gym.

The planned Life Time Fitness facility is approximately 103,000 square feet and is expected to include indoor and outdoor pools, waterslides, pickleball courts, a kids club and cafe.

That could become one of Meridian’s most substantial new recreation developments.

Other Meridian Restaurant Openings

Neighbor Tim’s BBQ

Local barbecue restaurant Neighbor Tim’s has opened its third Treasure Valley location at 1410 W. McMillan Road in Meridian.

The restaurant includes indoor seating and a drive-thru.

Habit Burger

Habit Burger opened a new Meridian location at 445 S. Innovation Lane in September.

It is the chain’s third Treasure Valley location.

The Wheatless Crumb

Gluten-free bakery The Wheatless Crumb opened in Meridian in September.

The bakery focuses specifically on gluten-free baked goods and adds another specialty-food option to the area.

Xin Chao Vietnamese Restaurant

A new Vietnamese restaurant called Xin Chao is planned for 2970 N. Eagle Road in Meridian.

Permits show plans for updated kitchen space and potentially rooftop seating in the former Urban Fox location.

The Foundry

A restaurant called The Foundry is planned for the former Loose Screw Beer Co. space at 1511 W. McMillan Road.

Plans call for keeping much of the existing bar layout while adding kitchen equipment and food-service infrastructure.

Boise and Meridian Are Growing Together

One interesting pattern here is how difficult it is becoming to separate Boise and Meridian when talking about restaurants, retail and entertainment.

Businesses frequently operate in both.

People routinely cross the city boundary for dinner or shopping.

And major developments such as The Village and Ten Mile draw customers from Boise just as downtown Boise draws Meridian residents.

That is why YoBoise should increasingly treat Boise and Meridian as a connected local market when the story calls for it.

We can still keep Boise as the site’s center of gravity without pretending Eagle Road is the edge of readers’ lives.

What We’ll Track Next

For this News category, we can turn this into a recurring beat.

  • New Boise restaurants opening soon

  • What’s opening at The Village at Meridian

  • What’s coming to Ten Mile

  • Boise restaurant openings and closures

  • New stores coming to Boise and Meridian

That gives News a steady source of genuinely useful local stories instead of relying exclusively on breaking news.

The Bottom Line

The Boise-Meridian restaurant and retail scene is expanding quickly.

Downtown Boise continues adding independent restaurants and bars.

The Bench and Southeast Boise are getting more neighborhood concepts.

The Village is adding a major wave of national retailers and restaurants.

And Ten Mile is developing into another substantial Meridian destination.

For local residents, that means more options.

For YoBoise, it gives us a News category we can update constantly.
